Heretat is the fruit of the work of our predecessors who, with dedication, patience and tenacity, have taken care of the vineyards. With their stubbornness, they have been able to transmit the secrets of the development of a good Cava, armed with love and passion for the respect for nature and good quality. This is a tribute to the winegrowers who, in their simplicity and with methods that in those times were still rudimentary, have been able to transmit the most recondite secrets, taking into account the respect for Mother Nature.  

Tasting notes

Colour: Bright pale yellow, perfect integration of the fine bubbles with a soft and delicate texture.

Bouquet: Fine and elegant, a fresh cava with toasted notes like coffee with touches of vanilla and honeysuckle. Fruity, rich in aromas such as peach, grapefruit and white flowers (jasmine and elder-flower).

Palate: Fresh, fruity, creamy and, at the same time, light but with body due to the contact with the lees. Fine texture and very pleasant with notes of almonds and nuts

Elaboration

The varieties are harvested and vinified separately. We work with cold paste, soft pressing, musts selection. Once the fermentation is finished, we blend the wines of the different varieties. Second fermentation in bottle at low temperature to have a slow fermentation and aging until getting the optimum point of balance between freshness and creaminess.  

Gastronomy and recommendations

Heretat is a highly recommended cava to be taken as an appetizer and with dishes with strong, spicy flavors, although it can be accompanied by eggs (scrambled or boiled), cheeses (cured and fermented), rice, Iberian ham, blue fish and seafood (oysters and caviar).
