Our Rose and Clear cava has a pale salmon colour, exclusive and very striking. It is a colour that reminds us of the twilight of a warm summer sunset on a desolate beach. During a moment of this twilight joy explodes uncontrollably and jumps to the heart like a stream of pure happiness, dazzling, blinding, like a blade that suddenly sticks without any noise, and radiates a thousand splinters of well-being to the whole body, to every cell of the epidermis. This twilight proposes the benevolent expectation of a new tomorrow, it is the prelude to passions, dreams, illusions, that each one of us expects to come true. Summer twilight is the twilight of charm, mere utopia or solid reality, only we can decide this.  

Tasting notes

Colour: Clean and bright, pale salmon colour.

Bouquet: Intensely fruity, tropical red fruit (like grapefruit, blood orange), fresh red fruit (strawberries) and orange blossom. Touch of flowers such as snow drop and sun drop.

Palate: In harmony with its fruity and floral bouquet, fresh, sweet entry, high acidity, long and very pleasant finish.


Harvesting and vinification of the 2 varieties are done separately. We start with a cold paste, it is directly taken to the press to make the minimum possible extraction of colour from the skin. Part of the wine is produced as "blanc de noirs" and the other part with a maximum of 3 hours of contact between the must and the skins. The first musts are selected to make the alcoholic fermentation in stainless tanks. After the alcoholic fermentation, blending of the different varieties of wines to find the perfect combination, clarification and tartaric stabilization before bottling.  

Gastronomy and recommendations

It is an ideal wine to take it alone during the hot summer days , also recommended as appetizers and perfectly complements first courses, charcuterie, vegetables and pasta, semi-hard cheeses, roasts and white meats, etc.
